i tweaked it, as i had no mexican seasoning, so put in half tsp smoked paprika and half tsp oregano instead also as hubby can't eat peppers, i added carrots instead :-) also i had no veg stock, so made a weak beef stock instead, so not really vegetarian, but still healthy, i hope xx comment on protein...
